Fertilization is one of the developments under the Farming Tree of Manor Lords. Unlocking this development will help speed up fertility regeneration in Field.

How to unlock
As mentioned earlier, Fertilization is a sub-branch of development under Heavy plow on the Farming Tree. This means to unlock Fertilization, you will first need to unlock Heavy Plow, which you have to purchase.
Benefits
If you unlock Fertilization, you will be able to convert any fallow field into a Pasture, which allows Sheep to graze there (so you will need Sheep from Trading Post or Sheepbreeding). The sheep dung, in turn, will help restore nutrients in the soil and refill the fertility of a crop faster. However, note that this does not increase the fertility of the land.
Now, if you look at the larger picture, the Fertilization development can enable an efficient crop rotation system. However, it would only come in handy if your settlement is dependent on crops.
